Paolo Cali family has been producing wine for the last three centuries. Their winery is located in Vittoria area, one of the best Sicilian micro-territory for production of Frappato and Nero d’Avola.
During the last 15 years Paolo planted 15 hectares with vines in accordance with the traditional cultivation techniques. The terroir is extraordinary: all the stumps lie on prehistoric marine dunes. This peculiar characteristic enhances mineral and brackish notes; hence the choice of planting Frappato and Nero d’Avola.
The organic cultivation follows very stringent principles limiting the use of machines and chemicals. During winter, the artisans would dig 65,000 holes to facilitate oxygenation and ventilation of the plants, preventing bacteria from the stump. The vinification is made using indigenous yeasts only and prolonged maceration.
